Fresh Silver Whitebait Whole Fish

Slender silver whitebait, no longer than a finger, with a bright mirror-like sheen and soft, edible bones. Shown fresh on the counter, dusted and pan-fried, and rinsed in a bowl.

Delicate and faintly sweet. Fry them whole until crisp, or drop them into soup and egg dishes.
